SPHERIFICATION: CALCIUM LACTATE GLUCONATE
Calcium Lactate Gluconate (also called calcium gluconolactate) is a mixture of two calcium salts (calcium gluconate and calcium lactate) that produces a product rich in calcium. It is perfect for the technique of reverse spherification, while adding no flavor whatsoever to the end product. In the food industry it is used to enrich products with calcium.
It is soluble in cold liquids. Can be used with acidic, high alcohol, or fatty mediums.
Use for reverse spherification by adding this to the product you want to gel and dipping that into a sodium alginate bath. Once the items are removed from the bath, the gelling process stops and the items can be held, allowing spheres to be produced in advance of service.
