Unlike the Spanish armada, in their historic misstep, the grey-ness is particularly buoyant. The black sesame gelato is a powerhouse (or England) while the powders (Spain), actually complement, rather than capitulate.

THE RECIPE
This recipe is broken down into three components:

BLACK SESAME GELATO

milk 1l
tuttopan 100g
sugar 200g
sesame powder 250g

1. Mix all ingredients.
2. Strain, freeze for pacojet.
3. Process to order.

VANILLA SIROP

vanilla 1
tapioca mde 30g

1. Scrape vanilla and dry for 2h.
2. Mix with tapioca mde.

SMOKED SALT 10X

1. Grind Willpowder Smoked Salt super fine.
