THE RECIPE
This recipe is broken down into three components:

BEET SORBET

beet juice 1l
neutral base 350g
water 250g

1. Mix beet juice with neutral, water.
2. Strain and freeze for paco jet.
3. Process to order.

SANGRIA

raspberry 750g
water 250ml
sugar 100g
Willpowder Xanthan Gum 2.44g

1. Boil water and sugar.
2. Emulsify Willpowder Xanthan Gum.
3. Cool and emulsify with raspberry.
4. Fill soda sifon, charge with CO2.

POMEGRANATE BREAD

pomegranate 250g
water 200ml
sugar 200g
gelatin 2f
water 50ml
Willpowder Egg White Powder 80g

1. Boil water and sugar.
2. Dissolve here gelatin.
3. Hydrate Willpowder Egg White Powder in water.
4. Emulsify pomegranate, gel, h20.
5. Chill to 4C.
6. Whip, spread, and dry 48h.
