Forming the holy trinity with scarlet johansen is no easy task, but this “jello 3.0” is up to the challenge. The dessert is based on the concept, elaborated by Herve This, that liquids diffuse in gelatins at a measurable rate over time.


THE RECIPE
This recipe is broken down into two components:

HIBISCUS JELLO 1.2.3

hibiscus 200g
alcohol 50ml
water 2l
sugar 300g
knox gelatin 150g

1. Boil water and sugar.
2. Infuse hibiscus 48h.
3. Strain and prepare jello.

RED WINE REDUCTION

red wine 1l
sugar 50g

1. Boil then evaporate until a point.
