Willpowder

 

DEEP BLUE SEA

Somewhere…waiting for me, my lover finds me. A post Sinatra (the Columbia years) withdrawal, ive been waiting to be sailing away since college. An additional David Caruso reference was unavoidable, since at the time of release, it was unclear whether my big screen debut wouldn’t collapse with same intensity as his.

THE RECIPE
This recipe is broken down into two components:

LIME CURACAO C'S/ DROPLETS

lime juice 200ml
water 200ml
sugar 200g
Willpowder Agar Agar 6g
curacao 20ml

1. Bring water and sugar to boil.
2. Dissolve Willpowder Agar Agar.
3. Strain, rectify weight with curacao.
4. Reserve 50ml for droplets.
5. Set remaining in 1/2cm tray.
6. Cut miniature c's and reserve.

NYR4PD BLUE

sugar 100g
curacao 7ml

1. Dissolve curacao in sugar.
2. Dehydrate 48h.
3. Grind sugar.
4. Process in cotton candy maker.
